We had a great time with our new chef, Alan Jayson and new crew baking at the Pizza Truck Festival in New Haven. We had a parade of the 13 CT pizza trucks up and down I95, then set up in the parking lot of Sports Haven complex on Long Wharf. It was great for me to hardly touch the food for a change, and just watch my new chef and crew working so well together. This also allowed me to meet all the other players in the CT area, check out their rigs, and talk about ovens, trucks, trailers and the biz with all of our friendly competitors…some of whom I share resources and information with on a regular basis. While it was disappointing that there was nearly no media there for a Pizza Truck parade in the pizza capital of the western hemisphere, we met some great friends, new and old, and I’ve come a few steps further on my plan for the ULTIMATE Wood Fired Pizza Catering Truck, which I hope to build with a LARGE Italian, traditional low dome oven…Rig number THREE, which I hope the business will support soon. We pick up rig number two in Colorado in 2 weeks, as we are booking out the spring and summer now for two crews and two pizza trucks.
